crema catalana: no oven required
Ingredients
1 liter milk
2 egg yolks
1 cup sugar
1 tbsp vanilla
pinch of salt
3-4 tbsp corn starch
Optional: caramel
Directions
Create a corn starch slurry by adding the corn starch and just enough water that you can easily stir it.
Combine the milk, egg yolk, vanilla, and salt, mix until the egg yolk is incorporated.
Place on low to medium heat on a burner, wait until mix is warm
Mix in the sugar
Slowly add in the corn starch slurry and continue to mix
Bring the mixture to a slow boil and keep on mixing until the mixture gets thick-ish.
Put into individual containers and place in fridge to cool down
Optional
Once cooled down add caramel on top.
If you have a blow torch you can also add sugar to the top and blow torch it, like you would for creme brulee.
